The Essence of Japan events launched in 2022, with the aim of presenting the best of Japan.
In September 2026, the series will spotlight the Kyushu region for the first time, welcoming Executive Chef Tashi Gyamtso from Restaurant JIMGU at the “Botanical Retreat” auberge ENOWA YUFUIN. Together with Palace Hotel Tokyo’s Executive Chef Atsushi Yoshida, this unique dining experience invites guests to discover the essence of Japan’s regional diversity.


At the core of Chef Tashi’s culinary creations lies a “Farm-driven” philosophy.
On his daily visits to ENOWA FARM—cultivated from the soil up by the auberge—he harvests vegetables nurtured by the mineral-rich water and soil of Yufuin.
Guided by ENOWA’s vision of environmental circularity and local coexistence, Chef Tashi brings out the maximum potential of these ingredients born from the bounty of Oita.
The one-night-only dinner menu will feature an appetizer of Yufuin-grown asparagus and vegetables from ENOWA FARM, alongside a koji-marinated fresh Oita fish, grilled to perfection and finished with a seaweed beurre blanc sauce—all crafted to express the authentic charm of ingredients just as they are.
Resonating with Chef Tashi’s sincere dedication to his ingredients, Palace Hotel Tokyo’s Executive Chef Yoshida has designed a menu centered on locally sourced ingredients from Tokyo—creations such as a rich spiny lobster flan layered with a velouté of Tokyo-grown turnips, and a main course showcasing the branded pork “TOKYO X”, roasted and stewed.
