The Essence of Japan events launched in 2022, with the aim of presenting the best of Japan.

Following the three-part Hokuriku region series spotlighting the arts and crafts of Fukui, Ishikawa and Toyama, the next event in September 2025 will feature the northernmost prefecture, Hokkaido, where nature’s abundance nurtures a rich and diverse culinary culture.

Chef-owner Yoshiaki Takazawa of TAKAZAWA PRIVATE RESERVE NISEKO – an auberge that curates a one-of-a-kind dining experience inspired by nature and the finest local ingredients – will join Atsushi Yoshida, newly appointed Executive Chef of Palace Hotel Tokyo for an evening to celebrate the indulgences of Hokkaido.

To start the dinner, guests will enjoy an appetizer from Chef Takazawa – his signature Buri Daikon that evolves each year. Featuring premium yellowtail from Hokkaido and crisp daikon radish, finished with a delicate soy sauce foam, the dish is a fusion of traditional Japanese cuisine and modern culinary flair. The chef will also present a meat course showcasing Kinka pork from Furubira town, prized for its naturally sweet flavor, accompanied by fragrant asparagus from Assabu and potatoes from Kutchan, carefully matured for 540 days to deepen their taste.

Palace Hotel Tokyo’s Executive Chef Atsushi Yoshida will also craft an appetizer using ingredients from Hokkaido – a creamy corn mousse paired with exquisite sea urchin. A few drops of homemade curry-infused olive oil finish the dish, enhancing the depth of its flavor.

After 18 years of creating innovative cuisine in Akasaka, Tokyo, Chef Takazawa relocated to Niseko, Hokkaido to open TAKAZAWA PRIVATE RESERVE NISEKO in August 2023. Driven by his mission to ‘reinvent the familiar in a unique way that is simultaneously beautiful, original, and thoroughly delicious’, he continues to explore inventive cuisine with boundless creativity.

The singular culinary experience found here – transcending the boundaries of both Japanese and French cuisine and capturing the rich blessings of Hokkaido through his distinctive style – is highly acclaimed by food connoisseurs around the world.
